From April to October, there is very little chain of rain, so it's safe to choose a wedding date, but even in the rest of the year, temperatures can be extremely mild, so winter weddings in Spain are definitely an option.

However, since July and August are high season, flights and accommodations are more expensive, and some accommodations will also impose a higher minimum nights.
April, May, second half of September and October are - apart from the winter - the cheapest months.
